1. Harvesting

Cocoa production begins with harvesting the cocoa pods, the fruits of the cocoa tree. The cocoa pods are harvested by hand with machetes or knives, taking care not to damage the tree.

The pods must have the right color, which varies according to the cocoa variety, and it is crucial to pick them at the optimum time to ensure the quality of the beans.

2. Fermentation

Once harvested, the cocoa beans are carefully removed from the pods, along with the surrounding mucilage. This manual process requires care to avoid damaging the seeds.

The seeds and mucilage are placed in boxes or wrapped in banana leaves to ferment for 5 to 7 days. This fermentation is crucial, as it allows the development of cocoa's characteristic flavors and aromas.

During this process, the sugars in the mucilage are converted into alcohol and then into acetic acid, which contributes to the formation of aromatic compounds in the beans.

3. Drying

5. Shelling

6. Grinding

Cocoa nibs are ground into a paste called cocoa liquor, which contains cocoa solids and cocoa butter. Depending on the production process, the liquor may be pressed to separate the butter from the solids used to produce cocoa powder.

7. Pressing

The cocoa liquor is pressed to extract the cocoa butter at this stage. This process is carried out in hydraulic presses that apply high pressure to separate the cocoa solids from the butter. The result is a cocoa paste that can be dried and ground again to obtain cocoa powder.

8. Drying and Final Grinding

The cocoa solids remaining after pressing are dried to reduce their moisture content further. They are then ground again to obtain a fine cocoa powder.

9. Packaging

Finally, the cocoa powder is packaged in airtight containers to maintain its freshness and quality. This packaging must protect the product from light, humidity, and air, which can alter its taste and nutritional properties.
